Seder for all Seasons

Food has always played a large part in my life and in my understanding of Judaism. I’ve joked for years that the religion of my family is food and how we used to have to talk my dad out of going for pancakes on the way to Yom Kippur morning services. But, so many of my happy memories of my family and Judaism also revolve around food. Passover was always a huge thing in my house growing up. It was like Thanksgiving, just more organized. I have great memories of summer and lobster and clambakes with lots of fresh New England salt marsh corn! Yes, I’m aware that shellfish isn’t kosher, but I assure my family didn’t mind. Every holiday had some food association for me, as it does for so many people. It’s an easy way to connect to your family’s traditions.

But, my relationship with food hasn’t always been healthy. I was a very heavy child. I learned young that ice cream was “medicinal” and so we ate a lot of it. I actually didn’t understand what medicinal meant for years, I just thought it was an excuse to eat ice cream. Heart disease and type II diabetes runs rampant in parts of my family because of our love of food. I struggled with binge eating and body dismorphia problems through college, and still have the occasional relapse.

I just ate a kosher Whopper from Burger King in Tel Aviv on a soggy, white sesame seed bun that oozed with mayonnaise, tasteless pickles, subpar mustard, and wilted lettuce. I made sure to add an extra packet of ketchup to enhance the flavors of the meat patty.

Israel was ahead in terms of kosher fast food, but the United States is catching up. A kosher Subway has opened in Livingston, one of 15 kosher Subways expected to open this year throughout the United States.

When large corporations take an interest in kosher food, the Jewish community responds with jubilation, a sense of triumph, and an opening of their wallets. More exciting than the typical Jewish products (read: anything made by Manischewitz or Streits) are American products that go kosher.

Diary of a Pair of Boots

The boots had been sitting in a bag for weeks. They’d been moved from front hall to bathroom to tub and outside as needed, and I didnt know what to do with them. I’d worn my galoshes when I’d gone to help slaughter 3 turkeys the Thursday before Thanksgiving at a farm in upstate NY. That powerful first for me went very calmly and cleanly and my boots remained unmarked. I was surprised, but pleasantly - I had worn the boots and my raincoat with the expectation that they would get covered in blood - ruined.  I wore them again that Monday when I went to help slaughter the 24 turkeys we (my ethical kosher meat venture, Kosher Conscience) would need for the holiday. I was out of my mind with details and satisfaction and fear, but also relieved that I’d had the warm up the week before so I knew what the process would look like, feel like. That day went very differently from everything I expected and my boots by days end had quite a bit of blood on them, as did my  clothes and my skin. My skin and my clothes needed to be washed, no question. If only for sanitary purposes if not for comfort as well. But the boots became less clear, for reasons I didn’t see coming.

Shecting - A Personal Response

The personal responses to last Friday’s goat schecting were varied and intense. Thanks to Joti Levy for sharing her reflections in this guest post.

Friday morning I woke at my regular 6 am. The difference was that everyone else in the house also woke up, and more people were gathering. It felt like the cozy feeling of going on a road trip with people you love, except the road trip was down the block to the sadeh (field) to slaughter the goats.

Food Conference - Photo Exhibit

What does healthy and sustainable Jewish food look like?  

We asked participants of the 2007 Food Conference (and other flash-popping foodies) to submit their original photos for a special showcase at the conference.  The submissions ranged from gorgeous zoom-ins on dinner, to political statements, to celebrations of life on a farm.  It is a truly delicious collection.

The Role of the “Hechsher” in doing “Tzedek”

Today JTA reported on the upcoming biennial meeting in Orlando, in which the Conservative movement is expected to pass a resolution on the new Hechsher Tzedek, ethical kashrut labeling program.

The article also interviewed other religious and lay sources on the merits of the Hechsher Tzeek program. Rabbi Menachem Genack, head of the Orthodox Union’s kashrut division raises an interesting question, mentioning that ensuring social justice in our food system is the responsibility of the government, not religious bodies.

I actually agree with Rabbi Genack– the government has a greater responsibility to do so, and a greater potential to create appropriate regulations….theoretically.

However, for a variety of reasons, the federal and state governmental bodies that would have a role in regulating, legislating, litigating and enforcing laws that ensure the safety and health of workers in the food industry, and ensure a safe and healthy food supply–including OSHA, the USDA, the WTO, those enforcing federal anti-trust laws– have been asleep at the wheel. In the absence of a more sustainable, ethical food system in which these externalities are appropriately regulated, civil society, including religious institutions have an obligation to work towards such a system, starting with the Jewish community’s Hechsher Tzedek.

Canola and Grapeseed and Olive, Oh My: How to Fry This Hanukkah

latkes.jpgWith Hanukkah nearly upon us, it’s time to start prepping our latke recipes. The oil that we fry them in is more than just a nod to the Festival of Lights: It’s an essential ingredient as well, so it’s important to choose wisely. Different oils vary in flavor, nutritional value, and smoke points, and do you even know what Canola is? I’ve gone ahead and done some of the preliminary legwork to help you choose the right oil for your frying pan.

On the list you’ll find ideal oils for latke frying under the “Freedom Fry” heading, and oils to avoid on the “No Fry” list. Keep in mind that just because an oil appears on the “No Fry” list doesn’t mean that it’s unhealthy - for example, Flaxseed oil is rich in omega 3 fatty acids and can help lower cholesterol, but heat can destroy its omega 3 properties. Canola, on the other hand, has a higher smoke point, but those who wish to avoid GMOs and bioengineered products might want to stay away, as 80% of acres sown to canola are planted with genetically modified seed.

When doing your shopping, remember this: Many oils come from plants that are sprayed with fat-soluble pesticides. Those pesticides concentrate in the oil portion of the plant, so always buy organic when you can.

One last tip: Remember to change your oil out after every couple of batches. The longer an oil is heated, the more free fatty acids form, which lowers the smoke point and increases your chances of burning. Whatever oil you choose, I wish you a happy Hanukkah filled with luscious latkes and lots of love.

Earth Mother: Q&A with Emily Freed of Jacobs Farm

Around the world, people are starting to grapple with the negative impact that large scale, industrial Agribusiness has had over the past half century. As its legacy of soil erosion, polluted groundwater, and chemically-laden fruits and vegetables becomes clear, more and more people are choosing to support organic and local farmers. Emily Freed is one of those farmers. As the Assistant Field Production Manager of Jacobs Farm in Northern California, she’s responsible for over 250-acres of organic farmland. She’s also a Jewish activist who was recently named as one of the Heeb 100 in the category of Food. Despite it being her busy season (she was in the midst of moving about 6,000 lbs of herbs out of the farms each day when we caught up with her), she found the time to discuss the organic movement, the future of food, the connection between agriculture and the environment, and how it’s all related to Judaism.

Some fun things to do with pumpkin

When my kids were younger we went through the annual battle that always concluded with someone (usually me) in tears. Halloween is a Jewish child’s enemy. Every year I tried to circumnavigate the whole situation by buying candy and renting scary movies. This was sort of a good solution though the idea of running wild through neighborhoods with friends dressed as batman, an army guy, or whatever the costume du jour was that year was all most too much. My youngest son (Jonah is 13) recently confessed to having “done it” last year. The conversation went something like this. “You know Halloween is not that big a deal Mom”, “I know, I have been telling you that for years. Ummmm, how do you know?”  Read more »

Shechitah vs. PETA

I stumbled upon an article today that concerned itself with what it called “Shechitah vs. PETA”–in other words, the conflict that exists between animal-rights advocates and proponents of kosher slaughter. It reminded me of why I’m both proud of and dissatisfied with the laws of kashrut that apply to animals. On one hand, I’m inspired by the intended consciousness and compassion that went into our dietary laws–rules that seek to minimize the pain and suffering of animals raised and killed for food. On the other hand, though, I’m all too aware of the fact that these laws fall short, and are in dire need of reassessment. Back in February, Sarah Rose pointed our attention to a Reuters article on hechshered fur. Israel’s Chief Rabbi, Yona Metzger, ruled that Jews must not wear fur skinned from live animals. “All Jews are obliged to prevent the horrible phenomenon of cruelty to animals and be a ‘light onto nations’ by refusing to use products that originate from acts which cause such suffering,” was the official decree. This is the kind of thing that makes me proud, and it’s what I’d like to see more of in regards to the collective Jewish attitude toward animals raised for meat.

Poultry and Penitence

The recent controversy regarding the custom of Kapparot (see article in the Forward) made me realize that Kapparot is virtually the only remaining ritual that uses an animal sacrifice as an atonement for human sin. In Temple times, any inadvertent sin had a corresponding animal sacrifice that was intended to cause the sinner to contemplate the nature of sin and how this animal is now losing its life instead of the sinner. pretty powerful stuff, if your environment is agrarian and animals are preciously traded commodities. In Search of Meaning & the Perfect Pomegranate Chicken (& Seitan)

In preparation for Rosh Hashanah I have been thinking about what I always seem to be thinking about …. namely food. This year I will be preparing meals for a yet to be determined number of family and friends (quite a feat in my tiny only semi-functional kitchen with a mini stove that has not worked properly in 2 years and burners that seem to go on strike every few weeks). As this New Year approaches, I’ve been mulling over the significance and symbolism of food in our tradition. For much of our collective history, Jews were an agricultural people, maintaining the delicate balance of give and take with the earth. They nurtured the land that sustained them and directly reaped the benefits of their labor. Even if you yourself were not a farmer, you likely knew your neighbor who was. Nothing was taken for granted, the rainfall, the fertility of the soil, the well preserved seeds passed down from generation to generation, the livestock, the fruit trees, and the grain - it was all very real to the Jews who came together to celebrate their feast days. Simply put, food was holy.

Needless to say, today our relationship with food is very different. We are much farther removed from our food sources. Even when we try to support local agriculture, we are not dependent upon it. We are part of a thriving global economy that makes almost anything available to us at anytime (at a price of course). So if there is a hailstorm in northern New York, or Pennsylvania, or New Jersey, and crops are decimated - most New Yorkers would not even notice. We have been conditioned to associate food with hermetically sealed plastic packaging instead of the soil, plants, and aimals that are the true sources of our sustenance (which is why I believe that so many people who do eat meat are sqeemish about witnessing an animal being slaughtered ala hazon’s schitah debate - or even making the mental association that their “cutlet” in all of its skinless boneless glory was once a living breathing bird)

What I have decided to do this Rosh Hashanah is to focus on the local and seasonal bounty and blend in the traditional foods symbolic of the goodness, sweetness, and fruitfulness we hope to be blessed with in the year to come. Read more »

Shechting a goat at the Hazon Food Conference?

On the Friday night of last year’s Hazon Food Conference I said, “put your hands up if you eat meat - but would not do so if you had to kill it yourself.” And a good number of hands went up.

Then I said: “put your hands up if you’re vegetarian - but you would eat meat if you killed it yourself.” And a different group of hands went up. And after a brief pause, everyone laughed.

They laughed because the two responses revealed what a self-selected group we were - and how fascinating our different distinctions. The first group were essentially saying, “I do like eating meat - but I know the process of killing it is awful - it’s actually so awful that if I had to kill it myself, I just wouldn’t eat meat.”

The second group were essentially saying “I’m vegetarian because I hate everything about how animals are raised and killed in our industrial food economy. But if I actually took responsibility for killing an animal myself, I would feel I was acting with integrity, and in accordance with my beliefs - and therefore, in that instance, I potentially would eat meat.”

And my response, when the laughter died down, was to say “Great: next year we’re going to shecht (slaughter according to kosher law) an animal here at the Food Conference..”

And people went: “Oooohhhhhh..”

Eating and Reading

Eating and reading from the John Rylands haggadah

There have been some very interesting issues raised about kashrut in recent months on The Jew & The Carrot, particularly regarding the compatibility of traditional kashrut with the ethical, ecological, gastronomical, and cultural sensibilities of many of our readers and and contributors. And of course, there are the reports about the the blatant abuses of some of the kosher meat processors. However, while the kosher dietary rules (which I personally observe) are an important source and means of expression for Jewish values about food, they are not the only ones. There are also many rituals connected with the table and the seasons that have also shaped how we think about and eat our food.

Reading books at the dinner table is something most of us Jews take for granted, based on our experiences of the haggadot scripting our Passover seders, Tu bishvat haggadot for Tu Bishvat seders, benchers for birkat ha-mazon and zemirot after Shabbat and holiday meals. Read more »
