		<description>I absolutely adore beets. I love the color, the sweetness and I get a real kick out of surprising my guests when they realize that they love it too. Most of my friends grew up on canned beets, so it's no wonder that they are shocked that beets are so delicious. 
My daughter called last week to ask me if I thought that she should take my Granddaughter to the pediatrician because her diaper was red. I forgot to tell her that I gave Layah roasted beets for dinner the night before. My one and a half year old granddaughter especially loved the fact that beets have two purposes. In addition to being delicious, she discovered that she could turn everything in the house red. The beautiful color lasted on her hands, thighs and face for two days. I love turning her on to new foods.</description>

the other morning i roasted potatoes, turnips &#038; beets in the oven - just cut into chunks and cover with olive oil, salt, and rosemary and roast for 40 min or so, turn it once or twice to brown evenly.  crushed cumin and corriander seeds are also extremely yummy, with a little apple cider vinegar and pepper for a kick...

Roasted beets tossed with sauteed beet greens, goat cheese, and toasted hazelnuts is also delicious.

I love the beet because I feel like it resists elaborate preparation.  It wants to be simply and elegantly prepared, so that you can still taste the earth.

Poetic waxing aside, I still have a bag of beets left over from my summer CSA share in my fridge!  Your post inspired me to finally make them tonight.</description>
