Thank you. I was wait listed for the tour and it's nice to read about it (though of course I'm envious). Hopefully Hazon will do another one next year!

I think this tour was a wonderful idea. When I heard about it I contacted the organizers and was sad to hear that it was only offered for Americans. Those of us living in Israel could learn a lot and use these resources in our daily lives rather than just when we are on vacation. Maybe next time.

Evan- lovely. You captured this beautifully. Chef Sofian, a member of the Chefs for Peace, made the most memorable meal for us. Besides the food he used, he added heart, soul, generosity, and a love of cuisine. I will never forget that meal. Especially the olives!
I was impressed by the cuisines passed on through generations and brought to Israel from Jewish communities in Yemen, Eastern Europe, Iraq, Morocco & Syria, creating the Israeli food scene it is today. I hope that as these generations live in Israel and cultures assimilate, that these food traditions are not lost.
