Gematria, the numerical equivalence game, can be a bit tricky. In this case they do leave off the aleph at the end of het to make it work.

And thanks to Rabbi Shmuel for that nice addition about Aaron's staff. I'll share it this evening when we sit for our pre-fast meal.

The word "shkadim" (Almonds) also means "swiftly diligent" as our approach to Torah and mitzvos should be (that's why Aharon used an almond pole)
Gmar Tov

Slight problem with your math.

Egoz=
Aleph - 1
Gimel - 3
Vav- 6
Zain - 7
Total= 17

Het=
Het - 8
Tet - 9
Aleph - 1
Total= 18

Although Het can be spelled without final aleph.

In addition to occasionally fudging math, Gematria people occasionally fudge spelling as well and chalk it up to 'mystical reasons'.

There is much more to be said about the spirituality of nuts in the midrash, so your study will be well rewarded.

Elad, thanks for the info on saliva had not heard that!

Well, I don't think this is a huge debate nor a big deal one way or the other. For the most part, it is just a custom, and an exclusively Ashkenazi one at that.
Apparently, though, there is a practical reason for it as well. Nuts increase saliva in the mouth and when we are going to be praying all day, this can become an issue. I dunno, that's just what they tell me. ;)

thanks for this post! part of my project for the second level of Kohenet training is creating metaphysical profiles of foods from a Jewish perspective to create meals with meaning. I hadn't even explored nuts in detail yet. I'll definitely be adding this to my notebook!
