Thanks! You bring up an interesting point. I don't know if most lower-fat alternatives are necessarily just alternative evils, so to say. Lubricant substitutes, such as Benecol, are more heart-healthy and very similar in taste to margarine and butter. It seems that the biggest reason consumers may not purchase lower-fat alternatives to their favorite foods, is less of an issue of how much salt or sugar is in it, as it is an issue of the original taste vs. the new, supposedly healthier taste. I would definitely take it on a case-by-case basis, and look specifically for foods that are lower in sugar or salt, depending on what the chef is looking to curb in a meal.

Moderation is definitely a virtue, especially when eating yummy foods that are traditionally not diet-friendly! ;)

Great article! I can't wait for Shavuot.

But in terms of making the foods healthier--using vegetable oils or lower-fat versions of real foods isn't necessarily healthy. Many low-fat foods contain higher levels of sugar or salt. Plus they are more processed than using regular butter or cream cheese. Wouldn't it be better to use the real thing and just eat less of it? I like the idea to use fruit topping.s
