I agree that the soy industry is not in tune with my beliefs as an environmentally conscious person -- that's why I eat very, very little of it.  But don't let that stop you from thinking about going veg.  You don't have to eat soy if you're vegetarian - there are plenty of other eco-friendly protein sources like seitan, almonds, chickpeas, quinoa, etc.  You'd be surprised to see how many vegetarians and vegans are staying away from soy these days~ especially when there are so many other options.</description>
