Hi Cindy - I certainly wasn't intending to create any "disasters" with this menu :)

You should check out Enlitened Kosher Cooking by Nechama Cohen - it's a Jewish cookbook created by a woman with diabetes. The Jew & The Carrot is planning a review in the near future.

Hey Michael - I'd love to cross post your vegan potluck on The Jew & The Carrot. Keep me posted!

Shmuel, you know we wouldn't create a "healthy/sustainable Rosh Hashana" resource page without mentioning your maple :)

Stephen - thanks for the info about agave - I didn't know it was suitable for people with diabetes.

Hilary - if you have a great recipe for honey cake, email tips@jcarrot.org. We'd be happy to include it in our recipe section!

BS"D

Another honey alternative is agave nectar. Sweet Cactus Farms (http://www.sweetcactusfarms.com) makes premium organic agave nectar certified kosher by Earth-K (http://www.earthkosher.com), one of the very few kosher certification agencies with health, environmental, animal compassion, and labor standards. Agave nectar has a low glycemic index and is suitable for those with diabetes in moderation.

And the timing couldn't have been better. :-) I'm hard at work planning the second annual Rosh Hashanah Vegan Jewish-Foods Mega-Potluck (here's the first: http://heebnvegan.blogspot.com/2006/09/vegan-jewish-foods-mega-potluck.html)
