Yid.dish: Bliny with red caviar


After traveling for two weeks in Russia, I returned to Ukraine with the great desire to eat caviar and sip champagne (very rare delicacies here, whereas every restaurant in Moscow and Saint Petersburg will offer these on the menu). I splurged and prepared the most delicious homecoming treat in this part of the world!

To make about 6 bliny (crepe-like pancakes), you will need:

  • 2 eggs
  • 2 cups of milk
  • 1.5 cups flour
  • salt to taste

Beat the eggs slightly with the milk, and then add flour and salt. Mix until batter is smooth, and then fry in a pan. Bliny should be about a hand’s span in diameter, although this will depend on your pan. Both sides should be golden and light.

There are many possible fillings (and each corresponds with its own specific bliny folding style). I used red caviar, but other variations include tvorog (a sweet cottage cheese), strawberries, bananas, jams, honey, and of course sour cream.
