An added bonus of this recipe: it also won't give you (and your guests) food poisoning if it sits out in the sun for hours, as does all the food at our neighborhood 4th of July block party. Indeed, this year, my sweetie made his usual contribution, deviled eggs, with olive oil instead of mayo, for that very reason. It turns out the olive oil version were just as yummy (really, everyone said so, not just me), and healthier to boot.

Loophole? Or radical innovation? You be the judge.

(Speaking of loopholes, I did combine the uneaten veggie "not dogs" from yesterday with some leftover pea soup from earlier in the week, and though I am no Contessa, it made for a scrumptious—and barefoot—dinner tonight. Generally I avoid fake meat, which is probably too overprocessed to be good for me or the planet, but it is a nice occasional to concession to the carnivore who's shared my heart and home for so many years)
