We love gazpacho in our house, especially for Shabbat. We almost always add black beans and corn which makes it heartier and adds protein and fiber. We sometimes do pulse the tomatoes (in the food processor) with a piece of good multigrain bread; this gives it a thicker base. Alternatively you can pulse the tomatoes with a tortilla or two- giving it a different flavor. The possibilities are endless!
