		<description>but that's the thing -- you don't have to actively do anything for those hours -- you just have to plan ahead.  and somehow, i find that saying 'do it the night before' sounds less scary than '12-18 hours' -- that's a lot of hours to count.
but it's true -- it's a different mindset.  it's not 'come home from work, what can i eat because i'm hungry NOW' --- which is also where produce in the wintertime comes from -- pitting and canning fruit _does_ take a while in the summer....but then you've got it made.
well, we're not perfect yet, but it's fun to try out these new (old) rhythms of living and see how it feels...</description>

I was struck by this line - it made me think about Michael Pollan's assertion that the average American spends 1 1/2 hours/day (total) making AND consuming their food.  In comparison, this seems like a lifetime - even though many of those hours are spent sleeping or doing other things.  A lifetime well spent, no doubt, but it leaves me feeling a little overwhlemed...</description>
