		<description>Since I eat mostly raw, and use zucchini as a pasta substitute, we use a lot of what we get in our produce box. It's easy to either julienne it or shave it with a veggie peeler and make "pasta". You can use fresh tomatoes and basil for "marinara" or you can blend cashews or macadamia nuts with a bit of water (choose your desired consistency) and onion salt for an alfredo sauce.
But what I really love is zucchini hummus. No need for cooking or chickpeas. It's delicious. Here's the site with a recipe:
